La Salada is a family-run winery in Catalonia’s Penedès region, based in Parellades de El Pla del Penedès, Spain, founded in 2011 by Toni Carbó and his wife Anna Serra. A fourth-generation winemaker, Toni revived his family’s vineyard, named after his great-grandfather’s farmhouse, cultivating 28 hectares of organic and biodynamically farmed vines, including native varieties like Xarel·lo, Macabeu, and Sumoll on clay-limestone soils. Following lunar cycles and minimal intervention, they use native yeasts, avoid sulfites, and ferment in stainless steel, amphorae, producing vibrant natural wines.
